Small scores, easily explained away as innocuous oversight, are the mainstay of a veteran bar villain.
In this ploy our malicious mixologist simply neglects to ring up BUMP CHARGE MODIFIERS yet charges customers paying in cash the higher advertised price.
In this way, the drink's primary spirit is accounted for but the much less costly secondary liqueur is not, having little impact on monthly PC%.
As usual, the overcharge eventually ends up in the bartenders tip jar.
On a busy night opportunistic thieves can easily do this dozens of times, nicely augmenting the handful of riskier full check rip offs perpetrated as well!
